easy-peasy chocolate pudding

Whether satisfying your sweet tooth or looking for a healthy treat for your kids, this chocolate pudding will hit the spot. So simple to make and so tasty, it’s guaranteed to become a staple in your family.

easy-peasy chocolate pudding

(Makes about 4 cups)

what you’ll need:

  • Fine mesh strainer
  • 3 ½ cups (875 mL) unsweetened coconut milk
  • ½ cup (125 mL) maple syrup
  • 3 tbsp. (45 mL) cornstarch
  • ½ cup (125 mL) raw cacao powder
  • 1 tbsp (15 mL) pure vanilla extract

instructions:

1. In a sauce pan, combine coconut milk, maple syrup and cornstarch and whisk well to combine.

2. Bring saucepan to a simmer over medium heat and whisk until mixture is thick enough to coat the back of a spoon (see tips), about 10 minutes.

3. Remove from heat and add cacao powder and vanilla and whisk until smooth.

4. Place fine strainer over a bowl and push pudding through strainer to catch any undissolved cornstarch and cacao powder.

5. Serve immediately or cool to room temperature and refrigerate up to three days
