summer peach and almond tart

Three ingredients are all you need to create a seasonal, delicious dessert for you and your family. This recipe should be made in every season; it’s so simple and just that good.

summer peach and almond tart

(makes 12 servings)

what you’ll need:

  • 3 cups (750ml) almond flour
  • 1.5 cups (375 ml) maple syrup
  • 4 cups (1 L) sliced peaches (see tips)

instructions:

1. Preheat oven to 300 F.

2. Spray a 9 inch springform pan or pie shell (if using silicone, spray is not necessary).

3.Warm a large sauté pan over medium heat and add the almond flour.

4. Stir often until the almond flour becomes fragrant and turns golden brown (about 10 minutes).

5.Remove from heat and add maple syrup.

6. Stir to fully combine until cohesive dough is formed.

7. Transfer to a pan or a pie shell and spread the dough to evenly distribute.

8. Press peach slices firmly into the dough, side-by-side, skin facing up. Peach slices should cover the entire surface of the almond tart ‘shell’.

9. Lightly bang the torte to pack it tight then transfer to a preheated oven.

10. Bake on center rack until top is firm and golden brown (about two hours). Remove from heat and cool to room temperature.

Transfer to circular serving dish top side up. Slice and serve (plating options are endless). ENJOY!

chef jordan’s tips:

  • Peach slices should be cut thick, about 2.5 cm.
  • This tart can be made all year around using the best seasonal fruit available. Berries and apples are two of my other favorites.
