summer peach and plum ‘fruit roll ups’

This version of fruit ‘leather’ or ‘roll-ups’ are for kids and adults alike and is the perfect go-to for those long hikes, camping trips or school lunches. This recipe is simple and requires just a little patience. Enjoy!

summer peach and plum ‘fruit roll ups’

(makes about 15 roll ups)

what you’ll need:

  • Parchment paper lined baking sheet
  • Elastic band
  • 2 Ripe Plums
  • 2 Ripe Peaches
  • 1⁄4 cup (60 mL) maple syrup

instructions:

1. Preheat oven to 325 F.

2. Place plums and peaches on parchment paper lined baking sheet and transfer to the preheated oven.

3. Cook plums and peaches until soft to the touch, about 25 minutes. Remove from heat and set aside.

4. Turn oven to 125 F.

5. Separate plum and peach flesh from their pit. Discard the pit and transfer fruit to a sauce pot. Combine with maple syrup and bring mixture to a boil.

6. Using an emersion blender (see tips), puree until smooth.

7. Spread the pureed mixture evenly onto the parchment paper lined baking sheet and transfer to the oven. Bake until mixture is firm to the touch and separating from the parchment paper (see tips), about 3.5 – 4 hours.

8. Remove from oven and cool to the touch.

9. Remove parchment paper from the baking sheet and place lengthwise in front of you with fruit facing up. Tightly roll the fruit into a long tube and place elastic band around the fruit tube to keep tight. Cool completely, about one hour.

10. Using a sharp knife or kitchen shears, cut the fruit tube into 15 equal portions. Serve immediately or store at room temperature in an air-tight container.

chef jordan’s tips:

  • A blender would work fine for this recipe. Transfer mixture to the blender and be sure to remove the top of the blender to allow the steam to escape.
  • A simple test to see if your roll ups are done; remove baking sheet from the oven and at a corner, try to remove the fruit from the paper. If it separates, the roll ups are ready.
